Ingredients
- Pork belly in square chunks
- Soy
- Sugar
- Shaoxing wine
- Ginger and scallion
How it is cooked
- The skin is blanched and the squares are tied or packed so they hold.
- They braise, skin up or in the traditional stack, in soy, sugar, and wine for a long time.
- The sauce reduces to a gloss. The fat should be soft, not waxy.
- Serve with plain rice. The sauce is the seasoning for the rice.
Taste
Sweet, salty, and very rich. The skin should be jelly and the lean still moist. A dry cube was not braised long enough, or it was reheated badly.
Possible allergens
- Pork.
- Soy sauce, which in China is often brewed with wheat.
- Wheat in the noodles or wrappers, and often in soy sauce.
- Shaoxing wine is rice wine and is cooked. People who avoid alcohol entirely should say so.
- A shared wok or a house chili oil can add peanut, sesame, or shellfish even when the recipe does not.
