Lanzhou beef noodles

Clear beef soup, hand-pulled noodles, chili oil on the side. A morning bowl far beyond Lanzhou.

Ingredients

  • Hand-pulled wheat noodles
  • Beef and beef stock
  • Radish
  • Cilantro and scallion
  • Chili oil, added to taste

How it is cooked

  1. The stock is simmered clear, not turned into a chili pot.
  2. Noodles are pulled to order. You can often ask for width.
  3. Beef and radish go in the bowl. Herbs on top.
  4. Chili oil is added by you, or by request. A bowl that arrives already red may still be the clear soup underneath.

Taste

Clean, beefy, and chewy. The chili is optional heat, not the broth. It should not be murky or sweet.

Possible allergens

  • Wheat in the noodles or wrappers, and often in soy sauce.
  • Beef.
  • Chili oil sometimes contains sesame. Say so if that matters. Peanut is uncommon in the classic bowl and not impossible in a casual shop.
  • A shared wok or a house chili oil can add peanut, sesame, or shellfish even when the recipe does not.
