Scallion oil noodles

Wheat noodles dressed with the oil left from frying scallions. A small bowl that shows whether the kitchen cares.

Ingredients

  • Wheat noodles
  • A lot of scallion
  • Oil
  • Soy sauce
  • Sometimes a little sugar

How it is cooked

  1. Scallions are fried slowly in oil until they are brown and sweet and the oil smells like them.
  2. Soy is added off the highest heat.
  3. Noodles are boiled and tossed in that oil.
  4. There should be more scallion than you expect and almost nothing else.

Taste

Savory, aromatic, and lightly sweet. The noodles should shine. If it tastes only of raw onion and dark soy, it was rushed.

Possible allergens

  • Wheat in the noodles or wrappers, and often in soy sauce.
  • Soy sauce, which in China is often brewed with wheat.
  • Scallion is in the name. Sesame is not required but some shops add oil.
  • A shared wok or a house chili oil can add peanut, sesame, or shellfish even when the recipe does not.
