Ingredients
- Tomato
- Egg
- Scallion
- Salt, and often a pinch of sugar
- Oil
How it is cooked
- Eggs are scrambled soft and set aside.
- Tomato is fried until it slumps into a sauce. A little sugar is common, even in savory kitchens.
- The egg goes back in and is folded through, not cooked hard.
- It is eaten with rice.
Taste
Sweet-sour tomato, soft egg, and not much else. A good one tastes like a home. A bad one is watery.
Possible allergens
- Egg.
- Sugar and salt. Soy is not required and is sometimes added.
- Ketchup is a shortcut some kitchens use and it changes the taste.
- A shared wok or a house chili oil can add peanut, sesame, or shellfish even when the recipe does not.
