Ingredients
- Unleavened wheat bread
- Lamb, often on the bone
- Lamb stock
- Garlic, chili sauce, and cilantro at the table
- Sometimes offal, if you asked for it
How it is cooked
- You tear the bread into pieces as small as you have patience for. The size changes the texture.
- The kitchen takes the bread and cooks it in lamb stock with meat.
- It comes back as a bowl you season yourself with garlic and chili.
- Do not stir it into paste. The bread should still have pieces.
Taste
Deep lamb, wheat, and a clean hot stock. Gamey if the lamb was honest. The chili and garlic are yours to add. It is a meal, not a side.
Possible allergens
- Wheat in the noodles or wrappers, and often in soy sauce.
- Lamb.
- Garlic.
- The table chili may contain sesame or peanut. The soup itself usually does not.
- A shared wok or a house chili oil can add peanut, sesame, or shellfish even when the recipe does not.
